About Islay Rum Distillery:
Nestled in Port Ellen between Kilnaughton Bay and Borraichill, the Islay Rum Distillery occupies a lovingly restored art-deco landmark “The Old Lemonade Factory” making history as the first and only rum distillery on the Isle of Islay.
With distilling starting in January 2022, our Head Distiller and Manager Ben Inglis combines traditional Caribbean rum making techniques with a distinctly Scottish flair and ingredients. At our heart is a bespoke copper pot still with twin retorts, designed to achieve an effective triple-distillation in a single run, yielding award winning small-batch rum with both smoothness and character.
Sustainability runs through our operation. All our rum is made with 100% Bon Sucro accredited molasses and the distillery runs on 100% renewable electricity, featuring a closed-loop cooling system. We also repurpose much of our pot ale to fuel the next fermentation, enhancing flavour while conserving resources.
Though not yet officially open for public tours, visitors are very welcome for small informal tours and tastings – just give us a call to arrange an Islay Rum experience!
